Try our Focaccia á la Latrovalis and it will definitely become a staple delicacy that you will continue preparing all year round. Simple ingredients, trouble-free preparation, and a final result that will disappear as soon as you remove it steaming from the oven. We refuse to take the blame for the burning of your fingers!
INGREDIENTS:
4 cups all-purpose flour
2 cups warm tap water
1 packet instant yeast
2 teaspoons kosher salt
4 tablespoons extra virgin olive oil
2 tablespoons oregano
1 cup Latrovalis Green and Kalamon pitted olives
flaky sea salt
Preparing the dough:
In a medium-large bowl, first combine the flour with the salt, and then mix in the instant yeast. Add the warm water. Using a wooden spoon or a rubber spatula, mix until all of the flour is well incorporated. Cover the bowl with a plastic wrap and refrigerate for anything between 8 and 24 hours.
Placing the dough on the pan:
Line a large pan with parchment paper and drizzle some olive oil on top. Put some olive oil in the palms of your hands, remove the dough from bowl, and place it in the centre of the pan. Rub the remaining olive oil from your palms onto the dough, making sure it is coated in olive oil. Cover the pan tightly with plastic wrap and allow the dough to rest for 2 to 3 hours, depending on the warmth of your kitchen.
Forming the focaccia:
In a shaker, shake the 4 tablespoons of extra virgin olive oil with 4 tablespoons of water to form a fragrant emulsion. Remove the plastic wrap from the pan, and dipping your fingers in the emulsion, first spread the dough to cover the pan and then sink your fingers all over the surface of the dough to fill it in deep dimples. Sprinkle the oregano and the flaky sea salt all over the focaccia and then scatter the Latrovalis Green and Kalamon pitted olives. Let the focaccia rest in a warm place.
Baking the focaccia:
Heat the oven to 450oF / 230oC. Place the focaccia in the center of the oven and bake for about 25 minutes or until golden brown.
